Banana Muffins

Here is a simple and quick recipe to make a healthier version of banana muffins using natural sugars and whole wheat flour. We don't need to compromise taste for good health. My daughter absolutely loves these muffins and doesn't know the difference between these and the regular ones. Definitely a win-win!

 

Prep: 15 minutes   |   Cook: 25 minutes   |   Makes: 9 muffins

Ingredients:

1/3 cup melted coconut oil

1/2 cup maple syrup

2 large eggs

2 large bananas, mashed

1/4 cup oat milk

1 tsp vanilla extract

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/2 tsp ground cinnamon

1 cup whole wheat flour

3/4 cup all-purpose flour

 

Directions:

1) Preheat oven to 350°F. Grease muffin tray.

2) In a large bowl, mix together the coconut oil, maple syrup and eggs until blended well.

3) Add the mashed bananas, milk, and vanilla extract and mix well.

4) Add the baking powder, baking soda, salt and cinnamon until blended smooth.

5) Use a spatula to add both the flours. Some lumps will be present. Do not over mix.

6) Add batter to the greased muffin trays and bake for 25 minutes, or until golden brown around the edges.

7) Let muffins cool completely before icing with optional Cream Cheese Icing.
